yeah, i have too much time on my hands. clearly. went to the farmer’s market early saturday morning and whipped this up for lunch, a loose, light slaw that i sorta copied from similar things that i like at greenstar. absolutely everything in this salad – except for the lemons, cos we ain’t in california anymore – is from the market.
i grated two carrots and tossed with 1/4 of a head of red cabbage. after finely dicing some flat leaf parsley, i squeezed in about 3 tbsps lemon juice and just a dash of olive oil. several shakes of salt and pepper later, i was done! except i wanted some crunch, so i added a handful of roasted tamari almonds roughly chopped for some much needed bite. i’m obsessed with super salty, crunchy food – anything that closely mimics potato chips, basically – and this did the trick.
i ate this with a heel of brown bread and hot jasmine tea. the way saturdays should be enjoyed. xo
